Taking responsibility for a sustainable future

We are conscious of our responsibility for the environment and are developing new concepts to protect the climate and minimise environmental impacts. For example, we are reducing our carbon footprint by using regional and seasonal ingredients and, with our successful WE LOVE GREEN product line, we include a balanced amount of plant-based dishes in our portfolio. Moreover, we are reducing our water and energy consumption, using recycled materials and choosing multiuse packaging. We are also proud of our effective AI-based waste management to optimise our use of resources by reducing food waste.

Good for people – good for the planet

One of the biggest challenges of our era is providing sustainable nutrition for the world’s population of more than eight billion while respecting the limitations of our planet. That is why we support the goals of the Planetary Health Diet which was developed in 2019 by a commission of 37 respected experts in the fields of health, agriculture, political science and environmental protection. 

A fundamental shift towards sustainable nutrition is essential. It is our benchmark and the goal we pursue every day.

Greater bio quality

Going forward, we will display a stronger commitment to the use of organically produced food, thus making a greater contribution to a more sustainable future.

Fostering climate-friendly nutrition

AN APP TO HIGHLIGHT SUSTAINABILITY

Food production is responsible for around 30% of global greenhouse gas emissions. To ensure greater transparency and encourage ethical food consumption, we use a sustainability labelling system (traffic light system) for the dishes on our menus. We communicate these values clearly to our guests via the Klüh Catering app.

GREEN BONUS CARD: OUR LOYALTY PROGRAMME

Our climate-friendly loyalty programme on the Klüh Catering app rewards our guests, at the same time fostering environmentally conscious behaviour. By purchasing environmentally friendly dishes, they earn points on their Green Bonus Card which they can manage via the app. This not only strengthens their loyalty to our restaurant but also underscores our commitment to sustainability and environmental protection.


Waste reduction and multiuse packaging

AI WASTE MANAGEMENT

Our goal is to reduce food waste by as much as 25% by 2025. Using target-based monitoring and smart waste measurement, our AI waste management is an automated solution for improving waste reduction processes. 

This works very simply. A camera equipped with AI-based image recognition technology identifies all food waste on the plates. In just 0.2 seconds, the web-based waste analysis tool identifies what and how much has been left on the plate – whether it is schnitzel, peas or salad. The data are evaluated and displayed clearly in a dashboard, making it possible to define measures to optimise menus and reduce the amount of product used.

WELCOME TO THE VYTAL MULTIUSE SYSTEM

Through our partnership with Vytal, we offer an innovative and environmentally friendly waste avoidance solution. In Germany, disposable tableware and packaging produces a waste mountain of 254,000 tonnes each year – equivalent to 13.3 million items of disposable packaging. Working with Vytal, we have been actively addressing this problem since 2021. Vytal’s digital multiuse system enables our canteens to offer a customer-friendly waste avoidance solution that is ready to be rolled out across Germany.

Protecting diversity: our flower sponsorship

Working with Mellifera e. V., we have taken on a flower sponsorship to establish a biodiverse flower meadow covering 1,000 m2 that will provide a habitat for insects such as bees, bumble bees and butterflies. By protecting the variety of insects and plants, we are supporting biodiversity. Our flower sponsorship also aims to increase awareness for environmental issues and make people more conscious of the need for conservation. The flower meadow was sown in autumn 2023 at the Dieckerhof farm owned by Friedrich von der Bey in Mülheim an der Ruhr using the northern flower meadow mix developed by the ‘Netzwerk Blühende Landschaft’ (Flowering Landscape Network). According to a study by the BienABest wild bee project, this mix of more than 40 different plants is particularly beneficial for wild bees.

‘ZNU Standard – driving sustainable change’

In June 2024, Klüh Catering – as a division of Klüh Multiservices – was certified for its successful sustainability commitment in accordance with the ‘ZNU Standard – driving sustainable change’ developed by the Centre for Sustainable Leadership (ZNU) at Witten/Herdecke University. This verifies the company’s performance in the areas of sustainable management and ecological, economic and social sustainability.
