Klüh Catering is now extending its gastronomic offers for flexitarians, vegans and nutrition-conscious diners through a cooperation with PLANT B. The world’s first plant-based egg alternative made from white sweet lupins, developed by the food tech start-up, now enables the specialist for innovative catering concepts to offer a wide range of culinary creations that resemble the classic hen’s egg in terms of taste, consistency and appearance.
“Our customers and the market are increasingly interested in creative food concepts which are not just tasty and healthy, but also sustainable and serve animal welfare. With our new range, we aim to meet this demand whilst also raising awareness for an environmentally friendly and healthy food culture”, says Thorsten Greth, Managing Director of Klüh Catering.
Healthy and sustainable
The whole egg alternative means that Klüh Catering’s table guests who would like to eat “egg dishes” but consciously choose to avoid the classic hen’s egg can enjoy a delicious plant-based alternative with many positive properties. The plant-based egg has the Nutri-Score rating A, is rich in protein and fibre, low in fat and carbohydrates, contains 50% less calories compared to a traditional hen’s egg and no cholesterol. It is free from added sugar, preservatives, gluten and soy. It is also compatible with a lactose-free and ketogenic diet.
Compared to a conventional hen’s egg, 88% less water is used in the production process and 91% less CO₂ is emitted. Moreover, 40% less land is needed to produce the plant-based whole egg alternative. At the same time, the lupine, the main component of the plant-based egg, has a positive influence on the soil and soil health, as it effectively fertilizes the earth itself by producing nitrogen, promoting soil fertility in the long term. What’s more, because the lupins are harvested late, bees, butterflies and other insects can use this valuable source of food well into the autumn, thus helping to support regenerative agriculture and biodiversity. The raw materials are mainly sourced locally and the climate-neutral production is carried out in Westerwald (Rhineland-Palatinate).
Innovative catering
In the context of its comprehensive supply concepts, the catering company places a consistent focus on healthy and delicious dishes made from high-quality, regional and seasonal ingredients, and on ecologically, economically and socially sustainable development in order to protect the climate and keep environmental pollution to an absolute minimum. The cooperation with PLANT B therefore fits perfectly with the strategic approach of Klüh Catering.
